Description
Bromelain
is a proteolytic enzyme derived from Bromeliaceae sp. (Pineapple
plant). The proteolytic activity of this enzymes possesses a broad range
of substrate specificity and, is capable of efficiently hydrolyzing most
soluble proteins. During the hydrolytic process, amino acids are liberated
by proteolysis but the reaction does not necessarily proceed to completion.
APPLICATIONS:
BROMELAIN
is effective in the hydrolysis of gluten complex in baking applications.
Baking powder can be reduced and sulfites eliminated from most batters.
Machinability and handling of doughs are greatly improved.
BROMELAIN
reduces viscosity of protein during fish meal and stick water
processing, allowing for less energy use, complete oil recovery and evaporation
to 50% solids based on fish solids.
BROMELAIN
is excellent for use as a digestive aid in natural health supplements.
